Peanut Garlic Chutney

No South Indian breakfast menu would be complete without inclusion of coconut chutney. But then sometimes situations arise when coconut is out of stock and sometimes you just want to reduce the coconut intake. Try below chutney recipe which can also be a great accompaniment to South Indian breakfast and tiffin menu. This chutney is an all time favourite at my place. Kids eat extra idlis/ dosas when they are served this chutney.

Spring Onion Chutney

With a plan to make spring onion parathas, I proceeded to make the dough. When the dough was resting assembled the ingredients to prepare green chutney as an accompaniment to parathas. And this time I took the idea which I remember seeing on you tube, to use spring onions while making the chutney. I utilized the remaining stalks of spring onion and finished it off which if not done, would have wilted in the fridge [Happens with me most of the times]. Glad that it tasted well with parathas.

Dates Pickle/Chutney

Met one of my friend (F) (who also follows this blog) in a community gathering. After we exchanged pleasantries, the discussion lead to blog and its recipes which happens most of the times with my other friends these days ;).
F: What's up next on the blog?
Me: Lots in draft, yet to finalize what's next
F: I tried few recipes and loved them. Green Gram Dhokla was a hit during my party.
Me: *** Happy Happy Smiles *** [I like to hear such feedback that boosts my confidence]

After the initial compliment, she came up with her suggestion

F: Vhanni [Being younger she calls me vhanni in konkani], would like to see more recipes for souls like us who are not sweet lovers, most of the recipes that you have posted belong to sweet category 
Me: [Chuckling ] blame that sweet tooth of mine. I get tempted to try out sweet/ desert recipes as soon as I see them
F: *** Smiles ***
Me: ok let me know what u expect more
F: May be some instant pickles

The above conversation left me wondering and thinking why I didn't post any recipe on pickles yet. Probably because its always a bottled pickle bought from stores when need arises. With a wish to fullfill her request asap I went in search of pickle recipe prepared from DATES :P  [why dates because I had bought them to prepare a cake and now that I have a suggestion here the cake preparation took a back seat scheduled for a later period]

Below is the recipe I tried ... inspired from Shireen's space Ruchik Randhap. I have tried few more recipes like soya granules subzi, mix veg pulao, carrot garlic chutney, and my family enjoyed all of those dishes. So I was sure that Shireen' recipe for this dish would also be a hit.  Don't know what to name this dish - pickle or chutney, I would include it under accompaniment. Shireen named the dish as chutney as she had added water. I have totally excluded water from this recipe, you may add if you want it to be paste like consistency.

Flax Seeds Chutney

Flax seeds also known as "Alsi bee" has gained popularity for its use in eggless preparation as an egg replacement ingredient as well as for the health benefits after its consumption. Read about the health benefits of consuming flax seeds here. Further studies are required to establish conclusive evidence of its health benefits upon regular consumption. You can check the respective names for this seeds in different languages here

I bought them with a plan to prepare an eggless cake, but before my preparation, came across its use in chutney. Looked for the chutney recipe and found one on Sanjeev Kapoor's site. This being my first time to use flax seeds, I have halved the quantity from his recipe and used regular oil since I didn't have sesame oil.


Ingredients

Flax seeds 1/4 cup
Garlic pods 10-12
Red chillies broken 4
Sesame seeds 1 tbsp
Rock salt as per the taste.
Oil 1 tsp [SK recipe mentions to use sesame oil]

Method:

Dry roast flax seeds on low flame till you get the aroma and seeds start spluttering. Keep them aside. Similarly roast the sesame seeds and keep them aside. Roast the red chillies till crisp. Heat oil in the pan, add garlic and saute them till golden. Once cool, put it in a mixie jar, add rock salt as per the taste and grind it to a coarse powder. When completely cool store it in airtight jar and refrigerated. Use it as and when required.


Note:
Some points about how to cook and eat these seeds [ I came across these points while browsing for the recipes using flax seeds]

  • Lighty roast and grind the seeds before consumption... should not exceed 2 tbsp per person per day, lesser amount if you have stomach upset.
  • Store the powdered flax seeds in refrigerator in an opaque or dark bottle.
  • Once powdered they turn rancid and hence it is recommended to buy the seeds from market and ground it fresh as per the requirement
  • They are known to generate body heat and hence should be balanced with consumption of ingredients in your diet that will keep a check on this body heat.
  • Drinking plenty of water throughout the day when you take flax seeds is essential.

Sweet Chutney [Dates Tamarind Chutney]


Ingredients

Dates 12-15 deseeded
Tamarind paste 2 tbsp 
Jaggery 2 tbsp or as per taste
Salt pinch
Cumin powder 1/4 tsp

Method:

Deseed the dates and soak it in warm water. Once cool grind it with tamarind paste and jaggery to a smooth paste. Now take this paste in pan add little water. Add the remaining ingredients and boil it on a medium flame till it reaches the consistency of a thick sauce. Switch off the flame and allow it to cool. Once cool referigerate the chutney and you can use it as required.

Green Chutney

Chutneys are the essential ingredients used in all types of chaats and served as an accompaniment to snack foods like samosas, vadas, dhoklas, etc



Green chutney

Ingredients

A fistful of Mint leaves 
Coriander leaves chopped 1/2 cup
Ginger 1" grated
Lemon juice 1 tsp
Green chillies 2 chopped
Salt


Method:

Clean and wash mint leaves. Clean, wash and chop the coriander leaves. Chop the green chillies. Peel the ginger and grate it. Wash, cut and squeeze the lemon juice
Grind all the above ingredients in a blender to make the green chutney.

You can store this chuntey in refrigerator and use it for chaat or you can apply it on the bread for sandwich.
