Goli Bajje/ Mangalore Bonda

Goli Bajje, a popular tea time snack from Dakshin Kannada district is also known by the name of Mangalore bonda.  They taste scrumptious with crispy outside and pillow-soft insides that you can't just stop at one. Every restaurant or small food stall in this region will serve this delicacy. So next time you visit Mangalore or around areas on a vacation do try this item from their menu. Until that time you can try the below recipe which I got from my aunty. Though made with maida and packed with calories due to deep frying, I prepare them for occasional indulgences or for special parties at my place.

Nylon Khaman

Nylon Khaman, a healthy delicious snack is very popular snack from Gujarat. It's super easy to prepare and can be whisked in a jiffy unlikely the traditional method which requires soaking and fermentation. I had tried making this dish several times in the past but somehow was never happy with the results. So when Reem Khan posted her recipe she had mentioned use of citric acid with a special note that "No, lemon won't do". As I read through her recipe I realized the reason behind my unsatisfactory Khaman was use of lemon juice. I followed her recipe with few changes and it turned out perfectly right ~ soft spongy and moist just like store bought. Now this is my no fail Khaman recipe whenever I plan to make them.

Dabeli

It was all gloomy weather as I drove back home from office and all I craved throughout my drive was for some chatpata snacks. So as soon as I reached home browsed through the ingredients to find boiled potatoes, pav, chopped onions, roasted peanuts, pomegranate and aloo sev. With these ingredients all I could think of was making some Dabeli and enjoy the rainy splendor outside along with chai. 

Kutchi Dabeli or Double Roti is popular street side snack food from a place called Kutch in Gujarat where they use this special Dabeli masala. Since I was out of stock with this special masala I decided to substitute it with mix of pav bhaji masala, garam masala and chaat masala. Let's see how to prepare this snack without Dabeli masala powder.

Stuffed Appo/ Paniyaram With Potato Subzi

I hardly have any control on what actually happens during school lunch break time and don't know whether my kids really pay attention to eating during the breaks. According to my elder one his story goes like this ~ they need to go to toilet, wash hands, as well as PLAY [in caps because majority of the break time is spent in playing] besides eating. The younger one being in kindergarten , no clue about what he does. As of now its trial and error basis with his lunch box, where sometimes it comes empty and sometimes not. At the beginning of every academic year [during PTM's], we are reminded by the Principal of the school ~ try not to pack messy foods in the tiffin box and not to pack in such quantity as if they have come to school just to eat the food. To highlight his point, he told us about an incident of sambhar spill that happened in one of the kindergarten classroom and the mess that followed after this spill ... I can totally understand the apprehension of the mom who packed such a lunch box for her kindergartner.  So you see its not just about "What we should pack?" but also thinking about "What not to pack?" and that will make this lunch box idea exercise fruitful. I came across a good read here on certain don'ts while packing the lunch boxes. Hope you find it helpful. Few additions from my side to the above article: I always try out a particular new dish at home to check kids liking and this way they can also practice eating it at home. Apart from this let them practice opening the boxes, water bottles, juice bottles, etc and as they master the art of eating from their tiffin box, the concern of spilling will disappear gradually.

Usal Pav - A Match Made in Heaven

Usal pav is a traditional Maharashtrian breakfast/ snack dish, a legume based gravy served with pav. Although simple and straightforward recipe, it is very popular as yet another street food along with misal pav, so don't miss any opportunity to eat it when you are in Maharashtra. This was the best food I could think of eating from the canteen in my break before I head to the library after college hours study time. Back home amma used to make this concoction from different beans and legumes but the favourite of mine till date has been Mataki/Moth bean. She would go easy on spices, flavor it with goda masala and add little jaggery which I used to relish with garam garam phulkas. 

I have always followed amma's recipe to prepare this dish, but this time when I ran out of stock with ready to use goda masala [I usually get it from Mumbai] I decided to try the recipe from Koushi Bhatia's book "Favourite dishes of India". This recipe uses freshly ground masala paste to make it, an alternative option instead of ready to use masala powders. The preparation took a little more time as it involved frying and grinding the ingredients, but the final dish was fingerlickingly good. If you want it really hot and spicy you may add more chillies.

Vegetable Samosa-Guest Post 2

The guest today on Flavors And Colors is Usha Bhat. I came across her name for the first time when I read her recipe for MW mysore pak. I was astonished to see the fantastic results she had got with those sweets. After few exchange of messages, where she clarifyied my doubts on the above recipe, slowly I got to know her in person. And as I became part of food group where Usha akka is an admin, it was no looking back to our friendship. A sweet person, a loving homemaker and an expert cook she is all enthu to try out different recipes and prepares some mouth watering foods. She [with her supportive hubby] manages FB food group efficiently and this has successfully resulted in a new venture, their own blog "Konkani Khann Anik Jevan" with an action plan to list and file most of the traditional amchi recipes in an easy accessible way. Congrats Usha akka and our best wishes once again for the huge success with the blog!

Cupcake Idlis

A twist to traditionally served idly chutney, here is another dish I prepared for bday celebration at home. When I saw them for the first time posted by a FB member on a food group, it was a visual treat and idlis never looked so appealing to me. Since then have been thinking and trying of recreating similar magic at home. After initial failed attempts, now I am happy that I managed to get them as you see in below pics, though chutney icing designs are still not upto the mark. I smeared the top of idlis with chutney and created designs using a fork. Hopefully with future attempts I should be able to do them perfectly with piping bags. We can use any other chutney such as tomato chutney, red chutney, roasted bell pepper chutney, mixture of hung curd and tomato sauce, chocolate sauce, chocolate glaze, etc as topping.

Savoury Semolina Cake

To get back on track after vacation is one of the toughest task. Although, me and hubby back to office and kids back to school, it takes atleast a week's time to overcome vacation hangover and get back to routine with million things, especially my cooking. 

Now with "S" bday around, how can I sit back and laze around. Decided to enter my cooking mode as soon as possible and that led to browsing through my recipe books and bookmarks in search of a recipe to prepare something special for him on his special day. I got charged up as I came across the video bookmarked for later viewing. This video from Anjum Anand with BBC cookery show 'Indian Food made Easy' demonstrated the recipe of "Savoury Semolina Cake". The cake though savoury, I knew it was the perfect treat I could make for the bday boy. Many food bloggers had attempted her recipe which is very easy with use of easily available ingredients and involves simple process of mixing. The best part being the recipe is eggless and is healthy with lots of vegetables and no butter at allI was damn sure, baking this recipe was the instant cure to my post vacation blues and went ahead to try it. Served the cake slices with hot tea and I am glad that though an unusual way, I could prepare this savoury treat in time to celebrate the occasion at home. We relished having the slices with hot tea and kids with flavoured milk.

Pav Bhaaji Cutlets

Surprise your family members and guests with this interesting and innovative cutlet recipe made from pav bhaji. Yes, pav bhaaji!  The dish is prepared with a little twist to the traditionally served pav bhaaji. 

It was one of the times when I had prepared pav bhaji and my elder one wished to take it in his lunchbox. Usually I avoid packing foods that may be messy to eat in school and hence didn't prefer to send the bhaaji in its original form. But then an idea hit me, why not make cutlets and send it with him as most of the cutlets are pototo based and contains different mix of vegetables. I googled to find if anybody else has tried this and yes there was a member at Tarla Dalal's site mentioning about her experimentI went ahead to make them with already prepared bhaaji, stuffed it between pav and this served as a great grab and go, non-messy, wholesome and filling snack for the tiffin. Next time, I prepared the bhaaji with sole intention of making these yummy cutlets. Shallow frying made it much more healthy and I served them as tea time snack. Was happy to see everyone at home had polished off their plates in no time.

Potato Canapes With Sprouted Moong Bean

Moong bean is rich in protein, fiber, vitamins and low in fat. Sprouted moong is even more nutritious and I often include it in the diet, mostly as salads, simple chaats or stirfry. This time I did some variation as per the ingredients availability at home and adapted a bookmarked recipe from here.



Ingredients

2 big sized potato, washed, peeled and sliced into 1/2" thickness discs
1-2 tbsp olive oil
1 cup whole green moong, sprouted
1 onion medium sized, finely chopped
1 tomato medium sized, finely chopped
Fresh coriander leaves, finely chopped
3 -4 tbsp Tomato sauce + Chilli sauce or Pizza sauce [ You can substitute this with barbecue sauce or with green chutney and sweet chutney]
Grated mozzarella cheese as topping [optional]
Salt as per taste

Method

Microwave potato slices [dipped in water] for 2 minutes. Drain the water and pat the slices dry. Toss these slices in olive oil and a pinch of salt. See to it that slices get coated with oil. Spread these slices in a single layer on baking sheet [I used aluminium foil] and bake them in preheated oven at 200°C  for 20-30 minutes, turning half way until golden brown.

Meanwhile in a bowl mix sprouted moong, finely chopped onions, finely chopped tomatoes, coriander leaves, salt as per taste.

Remove the baking tray and spread a spoonful of the mixture over each potato slice. Top with pizza sauce/ tomato sauce + chili sauce and grated mozzarella cheese. Bake it for another 2-3 minutes. Serve it as snack or starter!



Note: 
You can add chaat powder, kala namak, red chili powder, lemon juice and sev if you use sweet chutney and green chutney instead of sauces.
You can use other pulses/ beans in place of whole green gram.

Eggless Doughnuts/Donuts

Doughnuts or Donuts is a type of fried dough confectionary food. Chocolate glazed doughnuts is favourite of my elder one  and for some people having it with coffee is like a match made in heaven . My favourite is plain glazed ones with a glass of milk. There are deep fried ones which are considered not so healthy and then the healthier baked ones but whichever recipe you opt there is nothing like freshly home made doughnuts. I thought of treating my family to doughnut similar to the ones bought from shops, so gave in to the deep fried version and tried this recipe from here [which I had bookmarked almost 18 months back,,,finally managed to do them !!!]



Ingredients

1 1/4 cup all purpose flour
2 tsp yeast
1/4 cup milk
1/4 cup water
1 tbsp butter
3 tbsp powdered sugar
a pinch of salt
1/2 tsp of vanilla essence
Glaze as per choice

Method :

Make the water lukewarm in a long glass, add yeast and a tsp of sugar to it. Leave it for 10 minutes covered. After 10 minutes you will see the foam/bubble froth at the surface in the glass. Mix well till the yeast dissolves.


Now mix the flour, powdered sugar, salt, vanilla essence, milk. Add the yeast mixture and mix well. The mixture will be bit sticky. With the help of a spoon continue kneading the mixture into a soft pliable dough. Allow the butter to come to room temperature and mix it to the dough. Knead again till the dough is smooth and elastic. Now place the dough in a vessel covered with a cling film and leave it untouched until it doubles.

As you see the dough has doubled in size, press it lightly to remove the air and knead lightly. Dust your work surface as well as the rolling pin with flour. Place the dough on the work surface, sprinkle some flour over it and roll it into 1/4" thickness. Use doughnut cutter to get the desired shape. I dont have a cutter so used empty bottles of different size to get the desired disc shapes. Place these disc rings on floured butter paper and cover them loosely. Allow them to rise for about 30 minutes.

Heat oil in a pan. Once the temperature is reached slide in 2-3 disc rings into the pan and fry both sides on medium to low flame till they are golden brown. Drain them on kitchen tissue.

For glaze

Chocolate glaze

Ingredients
1 cup powdered sugar/confectioners' sugar
4 tbsp unsweetened cocoa powder
5-6 tsp milk
1/2 tsp vanilla essence

Method:
Mix all the ingredients in a bowl. Stir well in order to remove the lumps if any. Once u get the desired consistency, dip the top halves of the doughnuts in the glaze, allow some excess to drip and then place it back on the wire rack, glazed side facing upwards. You may leave as it is to set or sprinkle some confetti of your choice.



Cinnamon sugar glaze
Mix powdered cinnamon powder with castor sugar and spread it on a plate. Dip the doughnut in it until it gets coated with sugar on all the sides.

Sugar icing
Take few tsp of icing sugar and add desired food color [ Here I have taken orange food color].Mix well to form a thick paste. With the use of plastic bag to make a cone and fill it with paste. Pipe the desired designs or drizzle on the surface of doughnuts.

Jam
Spoon a dollop of preferred jam and apply it on the doughnut.

Serve these doughnuts with a glass of milk/ coffee once the glaze gets set.

Note:
Doughnuts at room temperature can be stored in plastic box or cover it with plastic wrap for 2 days.
