Pasta Upma

I have prepared this dish in similar way as I do upma for kids tiffin or breakfast/snacks for them 

Now why this experiment of using farfalle. One of the weekend my elder one had some rehearsal practice at school and that put me in situation with less time on hands. In such situations, I opt to prepare the easiest as well as filling recipes for breakfast and upma tops the list. As I start assembling the ingredients, my struggle to locate the new packet of semolina which was brought few days back begins. [Yes sometimes the unorganized me ... don't realize the place where I put the stock in a hurry and then face such situations] With not much time in my hands, I grab the packet that was right there in front of my eyes, a packet of farfalle waiting to be used. Kids enjoyed this upma and kept demanding for more! Try this incidental variation and I am sure everyone in family would love it.

Desi Pasta

Kids at home love to eat pastas and often I prepare this dish with regular pasta sauces. This time I thought to try some fusion and cook them in traditional Indian way by blending it with Indian spice powders. [at the nth minute I realized the stock of required sauces had got finished and hence this daring idea !!! :)]. So here's the easy peasy recipe for this dish.



Ingredients

Shell shaped pasta 1 cup [ U can use any other type of pasta/ macaroni of your choice]
Soya chunks shredded 1 cup
Mixed vegetables 1/2 cup [I used frozen ones, thawed and boiled with salt]
Capsicum chopped 1
Onion large sized 1
Tomato medium sized chopped 1 
Tomato Ketchup 2 tbsp
Ginger garlic paste 2 tsp [ U can used freshly crushed/ finely chopped garlic ginger instead of paste]
Cumin seeds 1 tsp
Red chilli powder 1/2 tsp [ Since I cooked for kids I used 1/2 tsp, you can increase this as per  your preference]
Turmeric powder 1/2 tsp
Coriander powder 1 tsp
Salt to taste
Pepper a pinch
Coriander leaves for garnish
Oil


Method:

Cook the pasta as per packet instructions, drain it and keep it aside. Meanwhile cook soya chunks in boiling water with salt [as per taste]. Drain and squeeze excess water out of them completely. Grind it in mixer/grinder or you can shred them with hands into thin pieces [which is what I did here]

Heat oil in a deep frying pan, add cumin seeds. Once they splutter add onions and ginger garlic paste. Saute them till the raw smell disappears and onions turn golden brown. Add dry spice powders and fry for a few seconds. Now add chopped tomatoes, capsicum, salt [very little] and saute it till  tomatoes become mushy. Add in the boiled veggies, shredded soya and boiled pasta . Toss to combine well with spices. Keep it on medium flame for a minute or two. Finally, add tomato ketchup, mix well . Sprinkle some pepper powder and garnish with coriander leaves just before serving.

Pasta cooked in Cilantro sauce

Pasta is a kid friendly and easy to cook dish. 
Today I post Master and Miss Cilantro Pasta. [ I have tried to create kids face design while presenting the pasta and hence the name ]


Ingredients

Mixed Pasta [ I have used shell and spiral shapes] 1 cup
Capsicum 2 tbsp chopped
Sliced black olives 1 tbsp
Olive oil 2-3 tbsp
Salt to taste

Ingredients to blend
Coriander leaves chopped 3/4 cup
Green Chilly 1 or 2
Garlic 3/4 cloves
Ginger 1 inch grated
Almonds 8-10
Lemon 1/2


Method:

Boil the pastas as per packet instructions. Strain, rinse in cold water and drizzle olive oil over it. Keep it aside.

Blend the ingredients as mentioned above to green smooth paste.


On low flame take little olive oil in a pan, add chopped capsicum [2 tbsp], green smooth paste. Sauté for some time, add sliced black olives and then mix the boiled pasta. Mix it so that the green smooth paste coats the pasta. Switch off the gas flame and serve it hot.
