Brinjal Potato Drumstick Side dish

What do you do when you have little of each vegetable in your stock? I had brinjal, drumstick, tomatoes in the fridge waiting to be finished off. Usually I prepare sambhar. But with the dough resting aside to prepare phulkas I decided to make a mixed semi- dry side dish to go with them.



Ingredients

2 medium sized brinjals, 1 large sized potato, 2 -3 drumsticks 
2 medium sized tomatoes, chopped
1 large onion, chopped
1 tsp tamarind extract
1/4 tsp turmeric
1/2 tsp coriander powder
1 tsp cumin seeds
salt to taste
sugar to taste [optional]
2 tbsp oil

To roast and grind

1/4 cup coconut
1/4 cup peanuts
2-4 red chillies
3-4 garlic cloves



Method:

Wash and clean the vegetables. Chop brinjals, potatoes into 1 inch cubes. Cut drumsticks into 2" long pieces. Keep them aside. Dry roast the ingredients mentioned under the list and once they are cool, coarsely grind it in mixer. 

Heat oil in a pan. Add cumin seeds and as they crackle, drop in chopped onions. Saute them until they turn translucent, next add chopped tomatoes. Saute it and add coriander powder, turmeric, tamarind extract. Now add chopped veggies and saute. Add little water, cover and cook until veggies become soft. Add ground powder, salt and sugar. Mix well and continue cooking till it becomes semi dry mixture. Switch off the flame and serve it as side dish with phulkas or steaming hot rice.
