Benne Chakkuli/ Butter Murukku

A savoury snack and that is Butter Chakkuli - a traditional snack prepared from main ingredients such as rice flour, phutane daal [roasted gram / hurikadle] and butter [Loni/Benne is preferred for that taste].

Ingredients
4 cups of rice flour
1 cup of roasted gram, later ground into fine powder
1/2 cup butter [I used unsalted Amul Butter]
1 tbsp cumin seeds
2- 3 tbsp sesame seeds
pinch of asafoetida/hing
salt as per taste
Lukewarm water enough to make medium soft dough

Method

Sieve the rice powder, roasted gram powder in a bowl. Add salt, hing, cumin seeds, sesame seeds, butter and mix well with your fingers till you get a crumbly mix. Now add water little by little and knead it into medium soft dough, neither stiff nor loose. Apply little oil from inside of the chakli mould, put a small portion of this dough into chakli mould fitted with one star disc and press it either on plate or plastic. I did them on small squares of aluminium foil, which helped me to transfer them into frying pan.


Heat oil enough to immerse the chaklis in frying pan, on medium flame. Once the correct temperature is reached, gently slide the moulded dough in hot oil. Fry both sides until golden brown. Take them out with slotted spoon/laddle. Drain any extra oil by placing them on tissue paper. Once they cool down completely, store them in airtight containers.


Benne Chakkuli is ready to be served as snack with tea or coffee.
