Aloo Gobi Stir fry

A quick and easy to make side-dish that goes well with chappatis, rotis. You can also use it as stuffing to make toast sandwiches, wraps and tacos



Ingredients

3-4 cups cauliflower florets
3 potatoes, peeled and diced into bite sized cubes
1 tbsp ginger garlic paste
1 tsp cumin seeds
1 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp garam masala
1/2 tsp amchur powder
2-3 tbsp oil for seasoning
salt to taste
Finely chopped coriander leaves finely for garnish

Method:

Heat oil in pan. Add cumin seeds. Once they crackle add finely chopped garlic ginger and saute it on low flame till the raw smell disappears. Sim the flame and add turmeric powder, red chili powder, garam masala powder, stirring it continuously for 30 secs. Add diced potatoes and mix it well such that potatoes get coated with spice powders. Add cauliflower florets. Mix it well and cover it with a lid. Allow it to cook covered for 10 mins on low flame. No need to add water. Stir it in intervals to avoid vegetables sticking to the base of the pan. Turn off the heat, sprinkle some amchur powder and garnish with finely chopped coriander leaves before serving.
