Strawberry Halwa

This was one of those experiments of mine where I decided to give healthy twist by adding some fresh strawberries and make delicious halwa. The natural red color and fruity taste is what makes this halwa more irresistible. The recipe has been adapted from here.


Ingredients

1/4 cup cornflour

1 cup water, divided
3/4 cup sugar (depending on the sweetness of strawberries, you may adjust the sugar quantity)
12-15 fresh strawberries 
1 tsp cardamom powder
2 tbsp ghee + few drops for greasing the plate/pan
Fistful broken pieces of cashew for garnish

Method:


Wash and hull the strawberries. Transfer them to a blender and puree until smooth. Place puree in a bowl, add cornflour and 1/2 cup water. Whisk it well to make it lump free mixture and keep it aside.


Take sugar and remaining 1/2 cup water in a saucepan and heat it over medium flame, stirring continuously till the sugar dissolves. As the bubbles start appearing, simmer the flame. Add the cornflour strawberry mixture gradually, while you keep stirring the mixture continuously with other hand. The mixture will start thickening with a glossy appearance. Continue cooking over medium flame until the mixture becomes thick (halwa consistency). Add cardamom powder and ghee and continue cooking until the halwa leaves the sides of the saucepan switch off the flame. Transfer the mixture to greased plate/ pan, garnish with broken pieces of cashews and allow it to cool. Once set, cut into desired shapes and enjoy.
