I had posted recipe for savoury semolina cake few months back, that was tried by few of my friends who enjoyed it as a tea time snack. If you haven't do try after you check the recipe here
Today the post is again a cake made from semolina, and its sweet rather than savoury. Its eggless and I used mango purree as egg substitute here. A big thanks passed to my friends D, U and J who inspired me to bake the below cake, definitely a keepsake recipe at my place.
Ingredients
1 cup semolina/ rawa, medium size [I used ready to use roasted semolina]
1/2 cup desiccated coconut
1/2 cup /100 gms mango puree [store bought/ you may use fresh mango pulp also]
1/2 cup +2 tbsp brown sugar
1 cup milk
2 tbsp ghee + extra for greasing the pan
1/4 cup nuts/ raisins [chopped cashews, sliced almonds, raisins]
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cardamom powder
Method:
Preheat the oven at 180 deg C and prepare the loaf pan by greasing it with 1 tsp ghee. Layer it with a portion of sliced nuts and raisins. Keep it aside.
In a bowl mix mango puree, milk, sugar. Mix it well. Add ghee and give one stir. In another bowl add rawa, desiccated coconut, cardamom powder. Sieve baking powder and baking soda and add it to this dry mixture. Gradually mix in the dry ingredients little at a time into wet ingredients. Mix it gently until the batter is of pouring consistency. Fold in the remaining nuts. Keep it aside for 5-10 mins. Pour the batter into prepared loaf pan and bake it for 25-30 mins or until a skewer inserted in the center comes out clean. Remove from oven and allow it to cool completely before slicing. I served the slices with Dulche De Leche and it tasted ummmmmmmmmm [fantabulous]!
