Pumpkin Fritters

" You are my pumpkin pumpkin, Hello honey bunny...." Do you remember this jingle...yes idea adv. Kids used to sing it like daily mantra at home for those initial days ... luckily the craze has come down ,,, and now its limited to the days when I cook any dish with pumpkin. 

Posting a yummy dish today made from pumpkin. You can substitute pumpkin with butternut squash in the below recipe



Ingredients

1 1/2 cup grated pumpkin
1 small sized onion, finely choped
1/2 cup + 2 tbsp besan
2 tbsp cup rice flour
2 tbsp mashed left over rice 
2 tbsp corn flour
1 tsp red chili powder
1/4 tsp turmeric powder
1 tsp jeera
1/4 tsp hing
Pinch of pepper powder
Handful of finely chopped coriander leaves
Oil for frying

Method:

Mix all the ingredients from grated pumpkin to coriander leaves in wide bowl. Add water little by little to make a batter of dropping thick consistency. Add salt as per the taste. 

Heat oil in a heavy bottomed pan. Scoop the batter with help of a spoon or your hand and drop it in the hot oil. Adjust the flame between medium to low heat and deep fry them till golden brown. Take out and place them on tissue paper to remove excess oil. Serve them warm. Enjoy these yummy fritters with hot tea or coffee.

  2. I want to make this as soon as I get hold of a pumkin :) The fritters sound so good Aparna. Love the pumpkin shell bowl as well as that orange spotted one beneath it :)

    1. @Priya: do try them and let me know how they tasted ... the orange spotted crockery below the bowl is 10 yrs old plate [from my set] that sustained through my cooking and serving :D

    1. @nandoos Kitchen: not so healthy due to the deep frying involved in the process,,,but once in a while chalta hai,,, surely will try to come up with shallow fried method in near future :)
