Orange Scented Broccoli and Cauliflower

Whenever the vegetables are not enough in quantity by themselves while cooking, I always end up mixing them in a dish. So when I had some cauliflower and broccoli florets this is what I cooked inspired from Rachel Ray's recipe here. Its healthy and very easy to make.



Ingredients

2 cups cauliflower florets 
1 cup brocolli florets
Few orange peels
2 tbsp of orange squash (you may use orange juice)
1 tbsp finely chopped garlic
12-15 shallots
2 tbsp olive oil
2 tbsp of sliced scallions
1 small orange, peel, segment and cut into chunks [optional]
Salt to taste 
Black pepper to your taste

Method:

Heat some water in a skillet and add salt to it. When the boiling starts, simmer the flame. Add the florets, orange peels and cover it. Simmer it until the florets become tender. Remove the peels and keep them aside. Drain the florets. 

Heat olive oil in a wide pan. Add finely chopped garlic and saute it for a min. Next add shallots and cook until soft. Add the florets and orange squash. Mix it well so that the florets gets nicely coated. Season with salt and crushed pepper. Garnish with orange chunks and sliced scallions. Stir, serve and enjoy.
