Soya Chunks Song/Saung

Song/ Saung is an authentic dish from Konkani cuisine. It is one super spicy and tangy dish which goes very well with rice, dosa, idli and even chappatis. I usually opt for less spicy levels so that kids too eat it . I prepare this dish from either of these ingredients - potatoes, mushrooms, cauliflower, green peas and few beans like navy beans, soya bean, etc. 

Soya/ Meal maker which is known to be a healthy means of increasing the protein intake is also known to readily absorb the flavors of any dish that we cook them in. Recently I have been using soya chunks in different recipes substituting it for the main ingredients. It is during one of these times the below recipe happened. Glad that I attempted it and this was a healthy twist to amchi recipe which tasted very nice with chappatis.


1 cup soya chunks, boiled and shredded
3 medium sized onions, finely chopped
1 tomato, finely chopped
1-2 tsp red chilli powder [You can also grind tamarind with water and byadgi red chillies as per preferred spice levels]
1 small ball of tamarind soaked in water.
1/2 potato, boiled and mashed [optional, I opted to add in order to thicken the gravy]
1 tbsp oil [preferably coconut oil]
Finely coriander leaves for garnish [optional]


Boil soya chunks in water with salt and tamarind. Drain and squeeze them, slice or shred them if big chunks. Keep them aside. Soak small ball of tamarind to get about 1 tsp of its extract. Chop onions and tomatoes. 

Now heat 1 tbsp oil preferably coconut oil. Add finely chopped onions and saute it till they turn light brown. Next add chopped tomatoes and saute them till they turn soft. Add red chilli powder, tamarind extract, salt as per taste and saute it for 2 minutes on low to medium flame. Later add soya shreds/ pieces or soya as a whole [if your prefer it this way]. Add 1/2 cup of water and allow it to simmer for 5-8 minutes. Add mashed potato, stir well and switch off the flame. Garnish with coriander leaves [optional] serve it hot with chappatis or phulkas.
