Prunes Walnut Rolls

I have an eye for sweet and sugary things especially after my dinner, kuch meetha ho jaye types. Try my best level to keep control on sugar intake but sometimes just give in to my cravings and later deal with the guilt of increased caloric load. 

Prunes walnut rolls/ logs [and similar log recipes which uses no ghee and no/less sugar] falls under the sweets category that I can eat without a guilt. They are delicious,  fiber rich and can be made as healthy as possible by including different types of dryfruits. Below recipe is a perfect one to pamper our tastebuds while keeping a check on the caloric intake. The recipe is inspired from here. You can include different dryfruits such as figs, apricots, dates, cashew nuts, almonds, pistas, etc. 



Ingredients

1 and 1/2 cup finely chopped prunes [ If you plan to use food processor just remove the seeds and carry on with method]
3/4 cup walnuts, roasted and chopped
1 tbsp castor sugar [Optional]
1 and 1/2 tbsp lemon juice
1 and 1/2 tbsp honey



Method:

Remove the seeds and finely chop the prunes. Place the chopped prunes, sugar, honey and lemon juice in a sauce pan. Cook for about 10 minutes on low to medium flame until the mixture becomes mushy and gets reduced to thick jam like consistency. Switch off the flame. [You can choose to process the above mixture until smooth in a food processor, I preferred to have a little coarse texture of the prunes and hence didn't include food processor step]. Transfer the toasted walnuts into this mixture and stir it nicely. When the mixture becomes cool enough to handle, place it on baking/parchment paper. Roll the mixture into a log [covered with baking paper] and refrigerate till it becomes firm. Once set remove the logs from the fridge, unwrap the paper and cut into slices of desired thickness.
