Instant Masala Oats Appos

Recently, I got a request from one of my friend/ reader to share some diet recipes. I already have few of them shared on this space. With a note to myself to list down these recipes at the earliest [which would help readers to easily access them], I assured my friend to add more healthy recipes to this list whenever I come across it, provided the outcome of these recipe trials is "thumbs up" by family members :) 

Oats have been on hot seat/ in demand these days due to its health benefits and majority of us are trying to incorporate them in daily menu. I am one such person who is always on lookout to consume them through different recipes. The best part is it can be included in many recipes like parathas, idlis, dosas, upma, laddoos, etc. You can check the recipes that I tried successfully with inclusion of oats and has been posted here, here and here. Below is the recipe of Masala Oats Appos which is not just delicious but a healthy powerpacked dish served as breakfast in the morning or tea time snack in the evening. The original recipe was shared by my friend Suphala Shenoy and I did minimal changes to her recipe. So if you are diet conscious this is one of those recipes you should try it.



Ingredients
1 cup quick cooking oats [ I have used Quaker's]
1 cup curds
1/2 cup finely chopped onions
3/4 cup mixed veggies [ I have used blanched carrot, beans, peas and corn kernels]
2 tbsp fine semolina
2 tsp rice flour
2 tsp chickpea flour
1 or 2 green chillies, finely chopped
2 tsp grated ginger
Fistful of finely chopped coriander leaves
A sprig of curry leaves
Pinch of asafoetida
Pinch of soda [optional]
Salt to taste

Method:

Mix oats, semolina, curds, rice flour and chick pea flour in a bowl. Adjust the batter consistency by adding very little water. Next add mixed veggies [ u can pulse them for one round in mixer], finely chopped onions, green chillies, grated ginger and  curry leaves. Adjust salt as per taste and add soda [optional]. Allow the batter to rest for 10-15 mins so that oats gets soaked in curd.

Heat the appe kayili [special pan that I had mentioned in this post], add a drop of ghee/oil in each mould of the pan. Adjust the consistency of batter once again [if batter becomes very thick] and spoon out into each mould until it fills upto 3/4th . Cook it covered over low flame. Flip them in between and cook on other side until they turn golden brown from all the sides. Once done serve them warm with chutney of your choice or sauce.
